Mexican
I fell in love with Mexican food in the late 90’s when D and I lived in California. Prior to that I thought it was stewed meat and globs of beans covered in gooey cheese. So wrong!
Mexican food is fantastic for entertaining, it’s bright on the plate and on the palate. It’s also healthy and relatively easy to make. Add a cervesa or a margarita and you’re ready for a party!

Warm creamy cheese dip with gorgeous mexican flavours.
Black Beans
Hearty, versatile, and a great base flavour in wraps and salads.
Red Rice and Corn Salad
This salad has a big taste hit but is very easy to make.
Street Corn
A meal on it’s own or serve with grilled meat.
Chipotle and Maple Syrup Chicken
Made in an electric pressure cooker. This recipe is quick and tasty.
Americana
American’s take their food very seriously. Whether it’s health food or junk food they have a lot to offer. Nowhere will you find better barbecue or fried food. Their sandwiches are constructed with precision, and their comfort food definitely comforts. Here are a few of my many favourites.

Buffalo Wings
I’m a buffalo wing purist. Must be dipped in butter and tabasco and served with blue cheese dressing.
Blue Cheese Dressing
Make your own! This recipe leaves store bought on the shelves.
Breakfast Sausage
It’s an American thing – a breakfast patty made from sausage meat. Imagine a McDonalds Sausage and Egg McMuffin – only better!
Fried Chicken
This is a cheats version of the original recipe but my kids love it… and so do their friends!
Choc Chip Cookies
These cookies are great served warm from the oven. Sweet crunch on the outside, softer in the middle, and gooey melted chocolate.
Vietnamese
Vietnamese food is fresh, deceptively simple, with a wonderful complexity of flavour.
Rather than cook all ingredients together to create an overall taste, the Vietnamese combine fresh and cooked ingredients in the dish to allow distinct flavours to shine.
This is fantastic food for a bored palate as it balances all of the basic tastes; salt, sweet, bitter, sour, and umami .

Slow cooked, melt in your mouth beef in a rich sauce.
